TasteAtlas highlights Andean-Spanish fusion in Cusco's cuisine

The TasteAtlas global food mapping site devoted an article to the traditional food of Cusco, one of Peru's main tourist destinations and the gateway to Machu Picchu —one of the Seven Wonders of the Modern World.

Moreover, the international food guide highlighted the delicious dishes prepared in said region, which are the result of the Andean-Spanish fusion.

Titled "Discover Cusco", the article includes the best traditional places to eat in Cusco recommended by food professionals, as well as the most popular dishes including the traditional Picante de Cuy, Cuy al Horno, and Cuy al Palo, as well as Olluquito con Charqui, Pollo a la Brasa, Lomo Saltado, and Aji de Gallina.


TasteAtlas states that Cusco —the former capital city of the Incas— is the oldest continuously inhabited city in the Americas and a UNESCO World Heritage Site

"This historical city's cuisine offers a delightful fusion of ancient Inca traditions and Spanish influences, creating a diverse tapestry of flavors," reads the article.

The good guide noted that Cusco's cuisine celebrates the abundant produce and ingredients found in the Andean highlands. Potatoes, corn, quinoa, peppers, and a variety of native herbs and spices play a central role in many dishes. 

"Cusco's cuisine includes some unconventional meats, such as cuy (guinea pig) and alpaca, which have been consumed by the Andean people for centuries and remain an important part of their culinary identity," indicates the publication geared towards world travelers.

The self-professed "world atlas of traditional dishes, local ingredients, and authentic restaurants" highlights that Cusco's streets are alive with a variety of delicious street food options, from Anticuchos (grilled skewers) to Chiriuchu (a cold platter).

"Street vendors offer an array of tantalizing flavors to passersby and locals alike. Whether it's savoring a traditional Pachamanca, delighting in the flavors of Rocoto Relleno, or exploring the unique tastes of guinea pig (cuy), Cusco's cuisine offers an exceptional gastronomic experience that reflects the region's history, culture, and geography," it remarks.
