Cebiche, also spelled as seviche, represents the national diversity and union of all Peruvians as it is a flagship dish considered national cultural heritage, Production Minister Elena Conterno said Sunday.
Minister Conterno said that cebiche is one of the country's most demanded dishes, as it is prepared with fresh fish caught in the Peruvian Sea, one of the world's richest in hydrobiological resources.
She added that the Production Ministry promotes this and other dishes prepared with anchoveta and pota, which are rich in calories, proteins, carbohydrates, calcium and omega 3.
Minister Conterno and famous chefs participated in the presentation and tasting of this flagship dish at the fishing pier of Chorrillos, during the National Cebiche Day.
“The goal is to support this flagship dish, promoting its consumption the entire year,” said Minister Conterno, who granted diplomas to renowned chefs from Chorrillos and other Limean districts.
It is worth saying that on March 23rd, 2004, the National Institute of Culture (INC), declared "Cebiche: traditional food of Peru” as Cultural Heritage, and afterwards the Ministry of Production through a Ministerial Resolution No. 708-2008-PRODUCE, declared June 28th as the National Cebiche Day.
