The APEC meeting is a great opportunity to show the world the riches of Andean cuisine, the basis of the success of Peruvian gastronomy, and the contemporary flavors of its variant Novoandina.

Andean cuisine is the matrix of modern Peruvian gastronomy. Its merit -and contribution- is to keep the traditional foods of the Incas and the pre-Hispanic cultures alive. There is, for example, the Pachamanca: an important, tasty, dish with its ritual of being baked in the earth. And if that wasn’t enough, the Novoandina cuisine adapts the tradition to international palates' demands.
 
Restaurants

Huancahuasi: Here, the visitor can enjoy the best Andean cuisine, accompanied by live Peruvian music. The menu includes pachamanca, picante de cuy, fried trout and barbecue, deep-fried cuy, chicha morada, and chicha de jora.

Brisas del Titicaca: A wide stage welcomes more than 50 artists in a spectacular presentation of Peruvian folklore: dances from the coast, mountains and jungle, accompanied by the delicious flavors of Andean cuisine. Folklore nights are Friday and Saturday, starting at 10 PM. Entry fee: VIP S/59 (about US$19) per person; general S/49 (about US$15).

Central: Award-winning restaurant owned by Peruvian chef Virgilio Martínez. Many dishes stand out made with cushuro, sangre de airampo, goats milk, kañiwa, yuyo de pampa, y pétalos de retama, ingredients that give life to new and unique flavors.
Address: Santa Isabel 376, Miraflores. 242-8515. Open from 12:45 PM to 3:00 PM and from 7:45 PM to 11:00 PM. Prices start at S/59 (about US$19). A tasting experience of 11 to 17 dishes costs around US$100.
 
El Rocoto: Specializes in food from Arequipa region. It highlights the White City’s typical dish: stuffed rocoto accompanied by potatoes with cheese gratin. Enjoy trying the baked lamb with golden potato, tripe stew, herbed potatoes and tacu-tacu with prawn sauce.
