Renowned Lima restaurant Central by Peruvian Virgílio Martinez holds its position at No. 4 in the list of The World’s 50 Best Restaurants.

Described as a gastronomic exploration of altitude and Peru’s ecosystem, Central takes guests on a culinary expedition through Peru’s ecosystem, from the Amazon to Pacific coast. 

Chef Virgílio Martínez and his team forage in the jungle, desert, mountains and sea to discover diverse local ingredients found at every altitude.

Central clutched the top spot on Latin America’s 50 Best Restaurant list two years in a row in 2014 and 2015. 

In London, Martínez heads projects including Lima, Lima Floral and a Lima concession at upmarket department store Harrods, and has plans to bring contemporary Peruvian cuisine to Dubai.

Maido climbs 31 spots in the list

A new entry in 2015, Maido from Peru takes the Highest Climber Award, sponsored by Lavazza, having risen 31 places to No.13.

Maido’s take on Nikkei cuisine – a fusion of Japanese and Peruvian – is widely regarded as the best in Lima, which is no small feat considering the Peruvian capital has earned its name as South America’s No.1 foodie hotspot.

Owned by chef Mitsuharu Tsumura, the restaurant made its debut on The World’s 50 Best Restaurants list at No.44 in 2015.

The World’s 50 Best Restaurants brings together a unique community of extraordinary culinary talent to celebrate global gastronomy. 

Featuring restaurants from 23 countries spread across six continents, the list provides an annual snapshot of the greatest gastronomic experiences across the globe. 

The list of The World’s 50 Best Restaurants, along with special awards, was announced on stage at the annual celebration of global gastronomy, hosted at Cipriani Wall Street in New York.
