Peru's President: Declaration of ceviche as heritage is recognition for fishers, farmers

The President of the Republic Dina Boluarte on Wednesday affirmed that the declaration of ceviche as Intangible Cultural Heritage of Humanity by the United Nations Educational, Scientific and Cultural Organization (UNESCO) is a recognition for Peruvian fishers and farmers.

Mrs. Boluarte led a ceremony at which the inscription of "The practices and meanings associated with the preparation and consumption of ceviche, an expression of traditional Peruvian cuisine" took place in Lima's Chorrillos district.

"This is a well-deserved recognition for you, brothers in fishing activities, brothers along Peru's 200 miles, but also for our farmers who, with spades on their shoulders, work on the land and provide us with the best products," she expressed.

Likewise, the Head of State indicated that this recognition "fills us with pride because it is a very beloved dish and is a national symbol."

"Our ceviche represents a highly large productive chain, ranging from artisanal fishers who go out at dawn to farmers who strive to obtain the best quality products," she affirmed.

Mrs. Boluarte added that ceviche is a culinary symbol of a deep country, because citizens from all regions of Peru participate in its preparation.

"My Government will continue to support each region because in unity we deserve to grow, trust, and have hope. It is a long job that we must rescue; we must continue insisting until we achieve what we want to achieve; we are confident that we will have a better country," she stated.

Mrs. Boluarte also assured farmers the continuation of the work to clean up various rivers from Tumbes to Ica regions, for which machinery was acquired to mitigate the effects of a possible climate phenomenon.

Moreover, Mrs. Boluarte reminded citizens that the government grant for artisanal fishers, each worth S/700 (about US$186), will benefit 47,500 people.
