CNN shares video on how to make seafood ceviche

CNN en Español —the news broadcaster that reaches more than 49 million Spanish-speaking households in Latin America and the United States through TV— shared a video about how to cook seafood ceviche in a very simple way.

In the video, the dish is prepared by Peruvian chef Mitsuharu Tsumura, owner of Maido —a Lima-based restaurant fusing Japanese and Peruvian cuisine and No 1 on the Latin America's 50 Best Restaurants list.

The master chef uses cabrilla fish as the main ingredient. Ceviche mixto, or seafood ceviche, also includes aji (Peruvian chili pepper) shellfish, cilantro, and Leche de Tigre —a citrus-based marinade that cures the seafood in a ceviche.

Finally, he puts thinly sliced onion on it and serves it with cancha (toasted corn) as well as chicharron de pescado (fish cracklings). 

It must be noted ceviche is the flagship dish of Peruvian cuisine.

Also, the Inca country celebrates the National Ceviche Day every June 28.
